In the jungle the mighty jungle....

My very first nephew is due on January 20th and my mother and I threw my sister a baby shower today. Her theme for the nursery is jungle animals, and Leah loves monkey's and giraffes. So I tried to make the theme of the cake match her nursery, and I think I did a pretty darn good job!!!
The top tier of the cake is vegan apple ginger spice with cinnamon buttercream.  The bottom tier is lemon with coconut cream filling and coconut buttercream.
Good luck in January and I can't wait to meet Quinton!

German Chocolate Cake

My sister Bobbi ordered a German Chocolate Cake for her mother for her birthday. This cake was a little, well, challenging! It is the first time I have made the pecan/coconut filling so it took a couple tries, but it all came together. The frosting on top is a chocolate ganache, very chocolaty. I hope Teresa enjoys her cake!

Dutch Chocolate Brownies.

When it's cold outside, and baby it was cold tonight, warm chocolate brownies are oh so comforting. These were made with dutch chocolate which gave them a smooth rich flavor. Although, I think my boys (even the BIG one) liked the batter more than the final product! I am ready for ya fall, bring on the cold blustery weather because I have some good stuff a cookin'.

Apple Crisp w/Vanilla Ice Cream

The PERFECT fall dessert, Apple Crisp. Totally easy to make, and oh so good! I picked up some local Gala Apples today and immediately thought, apple crisp...so had to go get oatmeal too! Ha, what a great idea...twas gone almost faster than I could spoon it out! I love this season, wish it would never end!
I was asked for the recipe on this one so here ya go!!!
Preheat oven to 375.

For the filling:
4-5 large apples, I used Gala Apples peeled and sliced thin
2-3 Tablespoons sugar
1 Tablespoon cinnamon
In a 2 quart baking dish mix apples, sugar and cinnamon together until apples are well coated.

For the topping:
1/4 cup oatmeal
1/4 cup packed brown sugar
1/4 cup flour
1/2 cup butter
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
In a medium sized bowl mix mix all ingredients together except butter until well combined. Mix in soft butter with a fork or your hands until you have large crumbs. Take oatmeal crumb mixture and place on top of apples. Place in oven and cook for 30-40 min. until apples are soft. Let cool. Eat warm with vanilla icecream. Enjoy!

Vegan Carrot Cupcakes w/Cinnamon Buttercream

Special order!!! Mom called tonight at 7 and said she needed some vegan cupcakes for tomorrow at 8 a.m. ...so I whipped up some Vegan Carrot Cake Cupcakes. I didn't have enough time to run to the Co-Op to get vegan cream cheese, so I made a Vegan Cinnamon Buttercream w/a Lemon Zest. They are so autumn, and they made my house smell so festive. Love, love these cupcakes.

The Nightmare Before Christmas

My Littlest Kenny turned 2 on Sept. 11 and he loves movies like The Nightmare Before Christmas and Coraline and now 9??? Why I don't know seems kind of dark and ominous to me, but he likes them, so I made him a cake with Jack and the characters from a Nightmare Before Christmas.
The cake is a super moist red velvet with a white chocolate filling and butter cream frosting. The butter I used was from Clover Leaf Creamery a local creamery out of Buhl ID. It was totally yummy and creamy!!!  Over all, this cake was awesome!
Oh yeah, and happy birthday to my little monster!
